Directions
Preheat oven to 350°F.
Mash banana with a fork.
Combine all ingredients except for banana in a separate bowl and mix well.
Add mashed banana to the other ingredients and mix until well combined. Rest 5 minutes.
Portion dough using a No.40 cookie scoop or a heaping tablespoon, form into balls and place on a ½ sheet tray lined with parchment paper.
Slightly pat down dough balls. Note: the bites will not spread very much during baking.
Baked 15-17 minutes or until lightly golden brown.
Cool and enjoy!
